I love a good classic chocolate chip cookie, but sometimes it’s nice to change it up. These s’mores cookies are a fun twist on your classic CCC. You can’t go wrong with the additions of white chocolate chips, mini marshmallows, and graham crackers. It’s like eating the best of both things, CCC and s’mores in one! The best part? No campfire is required!



S’mores Cookies
These ooey gooey s’mores cookies consist of both semi-sweet and white chocolate chips, mini marshmallows and chopped graham crackers, giving you get the best of both worlds, a classic chocolate chip cookie and s’mores, with no campfire required!
Equipment
- Large bowl
- Whisk or fork
- Baking pan
- Parchment paper
Ingredients
- 1/2 cup unsalted butter, 113g, room temperature
- 1/4 cup granulated sugar, 50g
- 3/4 cup brown sugar, 160g
- 1 egg
- 2 cups all-purpose flour, 240g
- 1/2 tsp kosher salt
- 1/4 tsp baking soda
- 1/2 tsp baking powder
- 1/2 cup semi-sweet chocolate chips
- 1/2 cup white chocolate chips
- 1/2 cup mini marshmallows
- 2 sheets of graham crackers, broken/chopped into small pieces
Directions
- Preheat oven to 375F. Line the baking sheet with parchment paper, and set aside.
- In a large bowl, cream the butter. Then add in the sugars and mix until blended. Then add in the egg and mix until just combined.
- Next, add in the flour, salt and baking powder, and soda. Mix these up until incorporated.
- Fold in the chocolate chips, marshmallows, and graham crackers.
- Using a medium cookie scoop, a spoon, or your hands, scoop out a dough ball (about 1-1/2 to 2 tbsp) and place each cookie dough ball on the prepared baking sheet, a couple of inches apart.
- Bake in the preheated oven for about 10 minutes or until golden brown at the edges but still a little paler and soft in the middle. About halfway through the baking, rotate the cookie sheet. Once baked, allow the cookies to cool on the baking sheets for about 5-10 minutes before transferring them to a wire rack to cool completely. Or if you like, you can dig in a little after it cools a bit. As we all know, s’mores are extra yummy when ooey gooey. These cookies are no different.
Makes about 12-14 cookies.
